Product Heating & Cooling in the
Food and Dairy Industry

Enerquip heat exchangers are used in thermal systems for a wide variety of heating and cooling applications in the food and dairy industry. This includes the processing of liquids, creams, and yogurts, the warming of syrups, and more challenging applications like the melting of chocolate, production of whey protein concentrate and other viscous heat-sensitive products.

One common use of shell and tube exchangers in these industries is for pasteurization.  Pasteurization in the food and dairy industry is a heat treatment which reduces the presence of harmful bacteria in certain foods to make them safe for consumption as well as to extend their shelf life. Products such as liquid and dried eggs, milk, cream, yogurt and ice cream and, in some cases meat, are often surface pasteurized with steam or hot water, using a shell and tube exchanger directly, or in addition to a hold tube in an HTST (high temperature short time) system.  The product is then cooled back down quickly to prevent a negative impact to texture or flavor, and to prepare it for packaging.

Personal Care Industry

Personal care product processing facilities achieve uniform product blending largely due to consistent and accurate product temperature throughout blending operations. Enerquip shell and tube exchangers offer efficient heat transfer with both large and small batch products, providing consistency in product heating and cooling.

Shell and tube heat exchangers have several advantages over other types of heat exchangers for product heating and cooling in the sanitary industries. They are designed with stainless steel surfaces that are polished to low Ra finishes, which makes the surfaces resistant to product build-up and easier to clean. Shell and tubes can process products that are more viscous than many other types of exchangers. They also allow easier visual verification that surfaces are cleaned than a spiral exchanger or plate and frame exchanger, since surfaces can be viewed either through a sightglasss or with the use of a borescope. Shell and tube exchangers can also operate safely at much higher (and lower) temperatures than other designs and can be designed to work under vacuum or high pressure conditions.

Shell and tube heat exchangers can also be designed in a variety of configurations, such as single pass or multi-pass straight tube units, or multi-pass U-tube units. They can be designed to operate horizontally, inclined, or vertically depending on the space available for installation. There are also many options available for surface finishes, mounting supports, insulation jackets and process and utility connection types.
